The assessment for NSW FSS Recertification is comprised of the following parts:
Part 1 - Lesson Quizzes
At the end of each lesson you need to complete a multiple choice quiz. Once you have scored 100% you are able to move onto the next lesson. You have five attempts at each quiz but don't worry if you use up all your attempts - just get in touch and we can help you out at no extra charge!
Part 2 - Case Studies
There are five case studies to complete in the course. The purpose of these is to check that you can apply what you've learnt to a real-life situation. Simply read the text and answer a series of multiple choice questions about the best way to handle the scenarios.
Part 3 - Reading Activity
There is a reading activity on potentially hazardous foods. Simply download the PDF from the course page and then complete the multiple choice quiz.
Key Focus Areas
In 2015, the NSW Food Authority announced some additional requirements for NSW Food Safety Supervisor training. Currently there are four key focus areas determined by the Food Authority - allergen management, safe egg handling, cleaning and sanitising practices, and Food Act offences. If you are seeking a NSW FSS certificate you must complete the four key focus areas.
If you are seeking NSW Food Safety Supervisor recertification, this course is appropriate and sufficient.
Part 4 - Observer Report / Declaration
There are some things we can't see you doing through your computer - such as washing your hands. That's why we need you to ask somebody that you work with or someone who works in the food industry to complete an Observer Report. This is a form that you ask someone you've worked with (past or present) to complete about tasks they've seen you doing. The form can be completed online or downloaded and filled out manually.
NSW FSS Recertification is available for a number of food industries. When you complete your student registration, you will provide contact information for a nominated observer and select your industry from a dropdown menu.
The industry you choose determines which Observer Report will be issued and the units of competency that will be displayed on your Statement of Attainment upon completion of your course.
The NSW Food Authority recognises the Hospitality & Retail industries only. When completing your registration, you will only have the option to choose one of these industries.

The course has been designed so that you can complete it at your own pace and the duration of the course varies depending on your existing knowledge of Food Safety and your understanding of the English language.
On average, most people complete the lessons and associated quizzes within about six to eight hours. The time it takes to complete the other parts of the assessment will depend on who you choose to complete your Observer Report and whether you need any extra assistance with the course content.
It's not unusual for students to sign up and complete the course on the same day, but we do give you up to 12 months to complete everything.
Don't forget that you don't need to do the entire course in one go - you can log on and log off as many times as you need. Some students choose to study for half an hour each day or an hour per week until they've finished.
You need to make sure that you have the following in order to be able to complete an Food Safety First course:
1. A modern web browser
Our courses use some of the latest eLearning technologies to deliver the courses. You will need to have a modern web browser to view and complete the course, and it's important that you have Javascript enabled.
2. An email address
During the registration process, we will ask you for your email address. This is a mandatory requirement for you to be able to access our systems. Email addresses cannot be shared by students.
3. Adobe PDF Reader or Adobe Acrobat
Some of the forms that you need to complete (such as the Observer Report) are in PDF format. To get the latest version of Adobe PDF Reader, go here.
Food Safety First courses work on most computers, laptops and tablet devices. Due to the small screen size, we don't recommend using the course on mobile phones.
As Food Safety First deliver accredited training, it's important that we adhere to the rules and regulations set out by the Vocational Education and Training (VET) authorities and relevant Industry Skills Councils.
The course content that we need to deliver is determined by the Industry Skills Councils. They also have rules about how training organisations need to assess students training to be a Food Safety Supervisor.
One of the rules is that students need to be observed practising food safety skills. As we deliver online training, we can't see you doing that through your computer. It can be difficult to arrange classroom assessments at dates and times that suit everyone, and we have many students that live in remote and regional areas who wouldn't be able to travel so far.
At Food Safety First, we have found the easiest way to meet this requirement is to provide you with an Observer Report so that you can ask someone in your workplace to confirm that they have seen you do things like washing your hands correctly and wearing appropriate clothing for work.
Our aim is to make this course as simple as possible for you and to remove any roadblocks that will prevent you getting your Statement of Attainment as soon as possible.
When you've completed all of the quizzes and finalised your Observer Report, you need to complete a form on the course page called the ‘Final Submission’. This only takes about five minutes - we need to ask you a few questions and confirm that you completed the course without assistance.
After this has been done, your Statement of Attainment and NSW Food Safety Supervisor Certificate are typically processed within 1-2 business days.
Your digital Statement of Attainment is emailed to you. Hard copies of both your Statement of Attainment and NSW Food Safety Supervisor Certificate are then posted shortly afterwards.
